"Founding History"
In 1872, the Meiji government, which was promoting Westernization, began to encourage the consumption of meat.
Ichiro, the founder, encountered Omi beef and was shocked by its deliciousness.
I founded a beef hotpot restaurant because I wanted to share Omi beef with as many people as possible.
The store was completely destroyed by fire caused by the Great Kanto Earthquake,
The third generation owner, Saburo, rebuilt the store and resumed business.
Since then, we have preserved the traditional flavor from the time of our founding to the present day.

head chef
Born in Edogawa Ward, Tokyo in 1967.
After graduating from high school, he began training in Japanese cuisine at a traditional Japanese inn in Hakone.
After that, he trained in Kyoto and Tokyo.
He began his training at our store in 1996.
He took over the store as the seventh generation owner in 2008.
We respect tradition and maintain the same taste,

Omi beef
The meat we serve at our restaurant is Omi Beef, Japan's oldest brand of beef. During the Edo period, when eating meat was banned, Omi Beef was exceptionally permitted to produce beef. Of the many brands of beef, Omi Beef boasts an overwhelmingly long history. The finely distributed fat throughout creates beautiful marbling, and the sweet flavor of the fat. It is highly acclaimed for its finely textured meat and mellow aroma.

Vegetables
We carefully select ingredients that complement Omi beef and bring out the delicious flavor of the meat. We contract directly with the farmers who produce each ingredient, and provide fresh, pesticide-free vegetables delivered directly from the source. Please enjoy the natural sweetness of the vegetables, which can only be tasted with pesticide-free vegetables, brought out by our traditional broth, which we are proud of.

seasoning
The soy sauce used in our warishita (soy sauce brewing) is made using the traditional, natural fermentation method passed down since ancient times in Japan. Naturally brewed soy sauce does not contain any chemical additives and is fermented using only natural koji mold, leaving it to mature for a long period of two years before being completed. Enjoy the rich aroma and full-bodied flavor of authentic soy sauce.
